Les Vaches
Colour
Bright and fluid golden colour with light yellow tints.
Nose
Delicate and ethereal on the nose at first, evoking notes of mandarin pith, orange, orange blossom and fresh rose. A hint of iodine accompanies aromas of almond pastry and shortbread. The ripeness of the vintage has created notes of peach, linden blossom, star anise, quince, liquorice and Reinette apple. Other notes mingle into this lovely bouquet: buttercup, strawberry, raspberry, pistachio and nutmeg.
Palate
Soft and fresh with creamy, smooth bubbles, this Champagne shows a nice fruity and crisp substance, underpinned by a subtle orangey acidity. The minerality conferred by the sandylimestone soil reveals this vineyard's terroir. Characterised by a beautiful contrast between cleanness and softness, supported by a hint of iodine salinity. On the palate, a classic tactile sensation is expressed through an exotic fruitiness, lengthening the finish with more fleshy, soft fruit.
